    O you who believe! believe in Allah and His Messenger and the Book which He has revealed to His Messenger and the Book which He revealed before

    What is the book sent before the Quran in which Muslims are told to believe in?

    It is all Revalation given to Messengers Prior to Prophet Muhammed.

    But we do not have any of those remaining, they have been lost.

    I would argue that part of the teachings have been lost, but not all of them. Corruptions are also present, as well as divine truths. In this particular case, the Quran, IMO, is referring to the reality that Muhammad (S) has fulfilled the prophecies of the OT regarding the final Prophet, thus confirming the past scriptures . The Quran is essentially arguing that by believing in Muhammad (S), one is believing in what has been revealed to the past Prophets, who have foretold him (S).

    The next verse refers to how people, most likely at the instigation of the leaders among the Jews, would enter into Islam in the morning and renounce it at evening to convey the idea that Islam brought them no good, so they left. This was on of their propaganda campaigns and Allah states that such behavior will land straight in hell, besides losing the ability to actually be guided to the truth.

    I believe that it doesn't matter what are the book sent before Islam or what are their contents because Quran brought back what has been lost and corrected what has been coorupted... What is required is to just believe in these books and the previous messengers because to believe in them is a part of Faith, as well as to believe in Angels and the Last day.
